Surfer's Breakfast


One recent weekend morning in Half Moon Bay, we stopped at a breakfast place on Main St. and for $3.99 I got the "Surfer's Breakfast". It consisted of a plate of rice with green onions, scrambled eggs and chopped bacon. It was good, but Jay and I thought we could finesse it at home. We've since made it about 5 times and it's a winner because it's yummy, cheap, fast and great for breakfast, lunch or dinner. Takes you back to the islands! Da kine grinds!

serves 4-6

2 cups white or brown rice (each works very well and brown is better for you)
1 bunch green onions
2 eggs
6 slices bacon
1/2 c. shredded parmesan cheese
sea salt & ground pepper

Cook your rice. (We got this Zojirushi rice cooker as a gift and love it). While the rice is cooking, slice your green onions and set aside. Then, make your bacon and chop it once it's cooled. When your rice is almost done, scramble your eggs.

Take a big bowl and pour in your rice. Sprinkle that 1/2 cup of parmesan cheese into it, along with your sea salt and freshly ground pepper. Stir. Now add your scrambled eggs, bacon and green onions. Stir and serve with a little green onion on top. Enjoy!

Mmmm! I LOVE eggs and rice! My fav is rice, mixed with fried egg and tocino, which is a filipino sweet pork. (which I'm always too lazy to seek out and buy) I never thought of just using bacon.

I know where my leftover rice is going this weekend... :0) Thanks for the tip!!

This is fantastic! I have always loved fried rice with pork and eggs mixed in and but have never had it for breakfast! This is a great breakfast dish. Im gonna try! Thanks

For added thrills (and one less cooking step):

Plate the rice in a steep sided bowl when it's still piping, steaming hot; fresh outta the cooker. Crack your eggs directly into the rice and stir through vigorously for a couple of minutes with a pair of chopsticks. Then add you other goodies (I like sriracha sauce on mine with cheese and onions).

That's how they serve eggs in the Japanese inns called ryokans.

Mmm mmm mmm you guys! I had a feeling there would be some clever variations added here. Thank you. Going to investigate the sriracha sauce, I know Jay would like that.

I've got no clever variations. I cook every day and hate to cook. I'm just writing this comment so you won't be surprised when you see me on your doorstep with my bags. If you guys cook like that, I'm moving in!

Yum. Since we are without boards (not to mention skills on boards) I may have to call this our runner or biker breakfast (but will think of you and your surfing ways as I prepare it). Thanks for the recipe!

Clare, yes! That is our beloved wedding gift from Brett. Love that plate.

Susan, that sounds like a great runner and cycling breakfast too! I run sometimes and Jay is a cyclist too. Neat!

Anon - that is funny. I don't like regular onions but can stand the little green ones for some reason. For you, I think this meal would still be yummy w/out the greenies.

SS! I had no idea! So cool.

I have not mentioned Jay's cycling before, I don't think. He used to race mountain bikes in Baltimore and did road biking as well, then took a break from cycling 2 years ago to just surf and skate. Now he is starting up again.

Tell me about you! Did you road race or mountain bike race? Are you glued to the Versus channel during the Tour every summer too? (-:

Jamers...this is what my Dad used to make for my sister and I on Sunday mornings while growing up. It is a total comfort food for me. He generally made it with bacon (or spam), but sometimes the leftover protein from the night before was thrown in (chicken, steak, sometimes salmon)....yummy! I might have to break my diet and make some this weekend.

I raced road bikes, crits. I'm not built for road races. I'm all butt and thighs, which means I was a sprinter.

I don't follow pro cycling anymore. After one too many drug debacles, I lost faith in my sport, especially since I know people on the amateur level were drugged up too.

Hey Jamie-

So I made this last night and the kids LOVED it! I tweaked the recipe a bit to make it stretch out for the 5 of us... 2 cups of rice, 6 eggs, entire package of bacon (burp). They loved the parm cheese on top, and since I didn't have onions, I chopped up some fresh basil I had, and added it to mine and Chad's. Sooo yummy!

We've dubbed this "Jamie Eggs".
